The recipes in this book are easy to use 5 stars. However the ingredients lists are like something from the '50s. Knock off 3 stars2 cups of Mexican cheese ... really? Look up the Wikipedia entry on Cheeses of Mexico. Upwards of 40 cheeses singularly Mexican, some found nowhere else.Flour tortillas. Generations of Mexican Grandmothers are spinning like tops in their grave.2 cans red enchilada sauce. Enchilada sauce is one of the easiest sophisticated sauces to make (essentially, mix 2 cups of chicken stock with 3 tablespoons of flour+oil roux and add 2tbl of your choice of ground chili peppers or chili pepper powder). You don't need to buy the soulless, too salty stuff from the supermarket.1 jar of salsa. The only thing easier to make than good enchilada sauce ... is good salsa.This book is fine if you want to make taco bell enchiladas.Otherwise? Waste of $$$

Many good idea even vegan. A wide variety of ingredients for a variety of picky eaters. Nice selection of ideas

Used the recipes in the book 3 times now. Tasty. Will continue trying many more. Love the book.
